Greek Style Salmon with Pecorino Pasta

Ingredients: Serves 4 people

>Greek Style Salmon:
-2 tbsp of olive oil
-4 salmon filets
-190g of Tzatziki sauce
-Pinch of salt

>Tzatziki Marinade:
-220g of plain Greek Yoghurt
-120g of grated cucumber
-1 tbsp of olive oil
-1 tbsp of chopped dill
-1 tbsp of lemon juice
-1 garlic clove, minced
-A pinch of salt

>Pasta and Pecorino sauce:
-2 tbsp of butter
-2 tbsp of gf flour
-250ml of milk
-90g of shredded Pecorino
-500g of gf Spaghetti
-1 garlic clove minced
-2 tbsp of the tzatziki used to marinate the salmon
-Salt


Ingredients:

>Tzatziki Marinade:
-220g of plain Greek Yoghurt

>Pasta and Pecorino sauce:
-2 tbsp of butter
-2 tbsp of gf flour
-250ml of milk
-90g of shredded Pecorino
-500g of gf Spaghetti
-1 garlic clove minced
-2 tbsp of the tzatziki used to marinate the salmon
-Salt

Instructions:

>Tzatziki marinade:
-Squeeze as much water out of the shredded cucumber as you can.
-Make the marinade by mixing together all the ingredients.

>Greek Style Salmon:
-Add the salmon and marinade to a ziplock bag. Shake to coat the salmon.
-Marinate in the refrigerator for 6 hours.
-Remove the salmon from the ziplock bag and scrape off any excess bits.
-Preheat the oven to 200°C.
-Add a pinch of salt to the salmon filets and place on a baking sheet. Bake until salmon is flaky, about 15 to 20 minutes.

>Pasta and Pecorino Sauce:
-Boil a large pot of water with a tablespoon of salt, then add the spaghetti and cook until al dente, about 10 minutes. Strain.
-In a saucepan, melt the butter on medium heat. Add the garlic and cook until fragrant, for about a minute.
-Add flour and whisk to combine, cook the flour, then add milk little by little while continuing to whisk.
-Simmer until it begins to thicken, add the tzatziki used to marinate the salmon and the cheese. Stir until the cheese is melted and the sauce is creamy. (Add additional milk or pasta water to reach the right consistency)
-Combine the Pecorino sauce with the pasta and drizzle over the baked salmon. Enjoy!
