Salmon, Poached Pears and Gorgonzola Breakfast Quiches

These quiches are filled with creamy egg custard, gorgonzola cheese, citrus-poached pears and smoked salmon. They are the perfect addition to your  brunch!

This smoked salmon quiche recipe is a dream. Easy, bite sized and made from scratch in under an hour. You can use store-bought puff pastry or pie crust, just let it sit for 20 minutes on the counter before use. Or alternatively, you can make the gluten free pie dough included for a subtle nuttiness that adds another layer of flavor ! This recipe makes 6-8 medium quiches depending on the size of your molds.

Ingredients:

>Crust:

  • 350gr of gluten free pie dough, recipe here

>Filling:

  • 3 eggs
  • 120ml of heavy cream
  • 2 tablespoons of cream cheese
  • 50ml of milk
  • 1/2 tsp of salt
  • 1/2 tsp of pepper
  • 80gr of gorgonzola, in pieces
  • 180gr of smoked salmon, in pieces

>For the citrus-poached pears:

  • 200ml of orange juice
  • 1/2 Lemon, zested and juiced
  • A pinch of cinnamon
  • 100gr of sugar
  • 2 pears, peeled

Instructions:

>For the crust:

-Preheat the oven to 200°C.
-Butter your quiche molds. Cut your pie dough  about 1cm larger than your molds. I used 7.5 cm molds and an 8.5 cm round cutter.
-Fit dough into your quiche molds, line with a layer of dried beans.
-Bake for 7 minutes or until edges are slightly browned.

>For the citrus-poached pears:

-Place the juices, zest, cinnamon and sugar in a saucepan.
-Cook until the sugar is dissolved.
-Put the pears in the syrup and simmer on low heat for 10 to 15 minutes. To check if the pears are done, prick with a knife, they should be tender but not mushy.
-Remove from the heat and let cool in the poaching liquid. You can keep the liquid for poaching other fruit or to use in a cocktail.

>For the filling:

-In a bowl, whisk the eggs, cream cheese, heavy cream and milk until full combined.
-Salt, pepper and mix in the add-ins (gorgonzola and smoked salmon).
-Laddle the filling into each pie shell about 2/3 full. Cut the pears and place piece atop each quiche.
-Bake for 30 minutes or until set in the middle.
