Harissa Shrimp Tacos

Ingredients:

Harissa Shrimp:

  • 600 grams of peeled shrimp
  • 1/2 cup of vegetable stock
  • 1 tablespoon of harissa
  • 1 tablespoon of paprika
  • 1 teaspoon of pepper
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 tablespoon of cornstarch

Mango salsa:

  • 2 ripe mangos, diced
  • 1 medium red bell pepper, diced
  • 1/2 cup of chopped red onion
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup of lime juice
  • 1/2 teaspoon of salt

To serve:

  • 4-6 flour tortillas, warmed
  • Harissa Shrimp
  • Mango salsa
  • Your favorite sauce
  • Avocado

Instructions:

For the Harissa shrimp:

  1. In a small bowl, add the vegetable stock, all the spices, the cornstarch and the harissa, mix together and set aside.
  • In a sauté pan, heat the olive oil over medium heat. Add the shrimp and garlic, sauté for 5 minutes. Stir, occasionally until the shrimps are cooked through.
  • Add the vegetable stock sauce and cook on high medium heat. Stir occasionally, coating the shrimp in the sauce for 2-3 min. Turn off the heat when sauce has reached your desired consistency.

For the mango salsa:

  1. In a bowl, combine the mango, bell pepper, cilantro and onion.
  2. Drizzle with the lime juice, season and mix well.

For the assembly:

  1. Place the desired amount of mango salsa on your tortilla.
  2. Top with the shrimp and the avocado.
  3. Drizzle your favorite sauce
